Cashew Cheese

If you like cheese, then this is the perfect substitution for it. The best thing about these cheese recipes is that you can substitute nuts according to your preference. My favorite nuts are definitely cashews, and whenever I can, I go for this options. For the sake of change, for the sake of balance, it is also good to try it out with some other nuts, such as macadamia nuts. 

If you like snacking, if you are a fan of crackers or fresh, colorful veggies like me, then this is a great healthy option and a great idea for dipping :)

Recipe for Cashew Cheese

  • 1 ½ cups cashews (soak them for 1-2 hours before blending them in the recipe)
  • 2 tablespoon lemon juice
  • 2 tablespoons water
  • ½ tablespoon lemon zest
  • 2 tablespoons nutritional yeast
  • 1 teaspoon salt, or to taste
  • 1 green onion, minced
  • 1 tablespoon parsley, minced

Before you blend all the ingredients together, make sure that you soaked, and after draining, make sure you rinsed the nuts. In a food processor or mini-prep, blend together nuts, lemon juice, zest, yeast, add water and salt and

continue blending until smooth, but still with a little texture. In the end, fold in minced onion and parsley.

FYI, cashew nuts make the creamiest cheeses - if you would like a softer, creamier cheese, you may use a high-powered blender.

Once it is done, you can store it in a container in the fridge.
